"Pointy" is a good way to describe the lettuce that has not really bolted but is on the way. I do have some...You have surely beat me on peppers! I do have some shishitos setting on. In the past I have dug up peppers and overwintered much like you did. I decided it was easier for me to grow them one year in a pot and overwinter that way.
